Why Irvine?
Irvine is one of the best places to live, work, hang out and sip awesome beer! My dad John Hadjis (who’s Tommy’s uncle) lives in Irvine, and this is a Hadjis family venture.
How will this differ from your San Clemente brewery?
San Clemente has a 30-barrel system. Irvine will have a 5-barrel system. We can be more creative with limited small-batch brews — some specifically made for Irvine.
Describe your tasting room.
We’ll have 25 beers on tap with 10 produced on site, including Trestles IPA; Hop Juice triple IPA; and Orange County IPA, brewed with locally grown oranges. We’ll brew about 30 beers a year, including barrel-aged beers, IPAs, jaxy IPAs, lagers, ales, stouts and Belgians.
What else is new?
We’ll have a Kansas City style BBQ restaurant, with a patio, that holds about 200 people, and a 5-barrel distillery for our own vodka, gin, whiskey and more. We’ll start off making vodka first. n
