Inside look at the Thai Chop salad with Sessions chef

Sessions is known for its sandwiches. Do a lot of people order salads?
About a third – which makes me super happy. In a deli, salads are often an afterthought to please the one person who doesn’t want a sandwich or is watching their carbohydrates. The Thai Chop is our most popular.

A Thai salad seems especially unusual for deli fare. What was the inspiration?
My mother! She eats healthy, lots of salads. She mixes in different nuts – a toasted nut crumble is our crunch factor. There are lots of good greens: tons of mint, crunchy romaine, thinly sliced red cabbage.

And Peruvian peppers!
Flavor, color, texture – they’re not spicy. I leave that to the chile garlic dressing. We finish with beautiful watermelon radish. You eat with your eyes.
